A beautiful morning everyone! This is The Baking Lassie inviting all cookie monsters out there to try and enjoy the classic chocolate chip cookies. I made it a little bit healthier by adding oatmeal to it so goodbye guilty feeling and hello cookies. Let's start!
The ingredients we need are:
- 1/3 cup melted butter
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla
- 1 1/8 cup flour
- 1/2 tsp baking soda
- 1 tsp cornstarch
- 1/4 tsp salt
- 1/3 cup chocolate chips
- 1/3 cup oatmeal
We have to mix the wet ingredients first. In a bowl, mix together melted butter, brown sugar, large egg, and vanilla until everything is incorporated. Then set aside. Easy right?
For the dry ingredients, we will be needing a sifter to avoid clumps of flour when we make the cookie dough. That would make a bitter taste in our cookies and we don't want that to happen. So, in a separate bowl, sift together flour, baking soda, cornstarch, and salt.
Now, to finish with our cookie dough, add the dry ingredients into the wet ingredients 1/4 cup at a time and mix well until everything is incorporated. This sounds easy, but believe me, it made my arms stronger and my muscles bigger. You can use a handheld mixer of course, but for me, there’s joy in doing it manually.
For the exciting part, let's put some magic in it. Who doesn't want chocolate? Now let's add the chocolate chips and oatmeal and mix well.
Cover the mixture with cling wrap and put it in the refrigerator to chill for 30 minutes. After 30 minutes, enjoy shaping it with any shapes you want and place your creation in a cookie pan that is lined with parchment paper. Make sure that there is at least 1/2 inch gap between each cookie because it will expand as it bakes in the oven. Lastly, bake it in a preheated oven, 180-degree Celsius, for 30 minutes or until it turns into a golden brown color on top. That means, the cookies are crunchy on the outside but chewy on the inside. Yum! Do not over bake it. Trust me, you do not want a hard cookie.
