Passionate About Baking

Hello everyone. This is The Baking Lassie and this is about why I started blogging about baking. First, I'll give you a little history about me. I am a nurse. Yes, I am happy and delighted to serve my fellow countrymen, but there is something missing in my life that leaves a blank space in my heart. I tried to look for it by doing crafts, singing, learning how to play the guitar, but none of those filled that blank space in my heart.

Then I remembered, I was craving for a bread locally called as pandesal. It is a soft, chewy and tasty bread that melts in your mouth especially when it is warm and freshly baked. And we can only buy it from a nearby bakery every morning. I thought to myself, what if I can make a pandesal from scratch? In that way, I would be able to eat it anytime I wanted to. I started watching videos on youtube on how to make pandesal.

I tried a recipe twice, then 3 times, followed by a fourth, but I always fail. My bread always turned out to be as hard as a rock. I can't even eat it. I paused for a while and I tried baking cookies. Since every bread I make was hard, I decided to bake cookies. It was a success but then, I search for what more can I do to improve my baking skills. The next thing I tried were cupcakes, then birthday cakes, more cookies, cheesecakes and anything that I can bake. That's when I realize that this has become a passion. Every outcome was a reward and every failure was a learning experience for me. It made me truly happy when someone enjoyed everything I baked.

Then I went back to baking a bread. I tried doing dinner rolls, felt confident while baking and then a miracle has happened. After 2 years of learning how to bake, I finally made a soft, chewy and deliciously tasty bread. I practiced and practiced for few weeks, still, the outcome is soft, which truly made me happy. No more hard rock bread. The next step, writing it down and sharing everything that I have learned, but how and where? That's when I realized that creating a blog about baking is the perfect tool for me to write everything I acquired in the process. And now I have my Baking lassie, happily sharing my craft with all of you.

Thank you for the Grateful One who gave me something to be passionate about. The Baking Lassie signing out for now and may God Bless us always ;).

Blogging about Baking Day 2: Here Comes the Cookie Monster

A beautiful morning everyone! This is The Baking Lassie inviting all cookie monsters out there to try and enjoy the classic chocolate chip cookies. I made it a little bit healthier by adding oatmeal to it so goodbye guilty feeling and hello cookies. Let's start! The ingredients we need are:  1/3 cup melted butter 1/2 cup brown sugar 1 large egg 1 tsp vanilla 1 1/8 cup flour 1/2 tsp baking soda 1 tsp cornstarch 1/4 tsp salt 1/3 cup chocolate chips 1/3 cup oatmeal We have to mix the wet ingredients first. In a bowl, mix together melted butter, brown sugar, large egg, and vanilla until everything is incorporated. Then set aside. Easy right? For the dry ingredients, we will be needing a sifter to avoid clumps of flour when we make the cookie dough. That would make a bitter taste in our cookies and we don't want that to happen. So, in a separate bowl, sift together flour, baking soda, cornstarch, and salt. Now, to finish with our cookie dough, add th...

Blogging About Baking Day 3: The Hypoallergenic Mugcake

A Happy Afternoon People! This is The Baking Lassie and we are going to make a mug cake for everyone who has an allergy. Last year, I had a bad case of allergic reaction where my whole body was covered with rashes and it was like the map of the earth were drawn into every space of my skin. The doctor advised me to avoid anything that can cause an allergy such as dairy products, eggs, kinds of seafood, dust, etc. Then I thought to my self, "How am I going to make or eat a cake if I will avoid eggs and milk?" Of course, thank God for the internet, I was able to get a recipe that doesn't include an egg nor a milk in a cake. And because of that, we will now make a banana mug cake, no eggs, no milk. Let's start! For the ingredients, we will need:  2 bananas: 1 mashed for the cake and the other for the decoration  2 tbsp vegetable oil 2 tbsp sugar 2 tbsp water 1/8 tsp baking powder 1/8 tsp baking soda 4 tbsp all purpose flour 1/4 tsp cinnamon p...
